wines slated for 2018 enological all-stars
2017 Morphos (Spring) - This pétillant naturel made from Cayuga and Seyval Blanc is bottled during fermentation, creating a bubbly, yeasty and refreshing living wine. Morphos Rose is made from Merlot in the same fashion - a fizzy, fruity, earthy rose. You'll receive 2 bottles of Morphos and 1 Morphos Rose.
2017 Syrah (Summer) - This Long Island Syrah is from 25+ year old vines. Large, ripe-looking grapes were actually relatively low in sugar. We crush, destem, and native ferment. The wine is pleasantly low tannin, easy drinking and herbaceous. Best enjoyed young and with a slight chill.
2016 Ewing Fruit Project (Summer) - Wild fermented fizzy blueberry wine, with fruit from our neighbors at Ewing Fruit Company.
2017 Wildman Cider (Fall) - Produced from apples gathered from our farm and other wild old trees from the fields and forests in our locale. Native yeast fermented, unfiltered, unsulfited and bottle conditioned.
2018 Skin-Contact Chardonnay (Winter) - Grapes from the North Fork of Long Island with botrytis provided high sugar levels and complex flavor. After five hours of skin contact we native fermented and stirred the lees frequently to prohibit secondary fermentation and preserve malic acid, resulting a round, rich Chardonnay with fresh acidity.
